I'm Filipina but I've been obsessed with Latin culture since I was a little girl. I like to think that I was Latina in my past life. My favorite movie as a kid was "La Bamba" and I grew up in San Diego, California where I got to experience the Mexican culture and Spanish language. I eventually went on to study Latin American and Iberian Studies and Spanish at UC Santa Barbara. One of my highlights of college was that I did a study abroad program in Santiago de Chile in 2001. Since then, I've been to Chile maybe 13 times and obviously, I've had a lot of empanadas! Empanadas are everywhere from gas station convenience stores, and street carts, to fancy high-end restaurants. My empanadas reflect my travels but with my special touch. I make each one from scratch and by hand. It's a special treat that I put a lot of love into. If you haven't tried them, you should!

Here I am making empanadas for the first time in Santiago de Chile. I had such a great time cooking with friends, hanging out, and eating delicious Chilean empanadas.
My friend, Humberto, loading a tray of empanadas in the wood-burning oven he built himself. The empanadas came out delicious with a perfect golden crust. This memory is the beginning of my obsession with empanadas.
